I made the following recipes on one of our camping trips last year and we loved them.  Hope you enjoy them, too!


Farmers Breakfast (made in a dutch oven over coals):

There's nothing like a meal made over the coals!

1/2 lb. bacon

1/2 lb. breakfast sausage (can use sage flavored)

1 medium onion, diced

A 2-lb bag of frozen hash browns

1/2 lb cheddar cheese (can be sharp or mild)

1 dozen eggs

Salt and pepper

Pre-heat Dutch oven, 6-9 bottom coals and 12-15 top coals.  Slice bacon and onion into small pieces and brown in the bottom of the dutch oven until onions are translucent.  Stir in the hash brown potatoes and cover.  Remove cover and stir occasionally to brown potatoes (15-20 minutes).  Salt and pepper the hashbrowns some if you want.  Scramble the eggs in a separate container (add salt and pepper) and pour the mixture over the hash browns.  Cover and cook until eggs start to set (10-15 minutes).  Sprinkle grated cheese over egg mixture, cover, and continue heating until eggs are completely set and cheese is melted.  Slice or scoop and serve.


Easy Campfire Dumplings(may be made over coals, on a campstove, or at home):

Oh, yummy!!!

2 cups diced chicken

1/2 stick butter

1 can Cream of Chicken soup

2 large cans chicken broth

8 flour tortillas

Salt and pepper

Add salt and pepper to broth and bring to a boil.  Slice tortillas in strips and/or cut in small squares and add to broth.  Cook about 15 minutes.  Add chicken and cook about 15 minutes more.  Adjust salt and pepper as needed – dumplings should be pretty peppery, in my opinion :0)
